• 3 cups rotini quick cook pasta (measured before cooked)
  • 1 cup taco meat, chilled
  • 1/2 large onion, diced
  • 1/2 cup green olives, sliced
  • 1/4 heaping black olives, sliced
  • 1 10oz can Rotel diced tomatoes & cilantro, drained
  • 1/2 cup tomatoes, diced
  • 1/4 cup mayo
  • 1/2 cup sour cream
  • 1/4 cup Pace Southwest Chipotle Salsa ( Use your favorite salsa)
  • 1/4 teaspoon Lawry's garlic sea salt with parsley
  • 1 teaspoon sugar
  • 2 pinches of sea salt
  • Doritos for garnish


Cold Taco Pasta Salad

This has a kick! If you don’t want the heat, use a mild salsa.


  1. Cook pasta one minute under al dente, rinse and drain.
  2. In med bowl add… mayo, sour cream, salsa, sugar and garlic salt.
  3. In large bowl add pasta, sprinkle with sea salt, then add… taco meat, onion, olives, tomatoes and Rotel.
  4. Pour dressing over salad and mix together and chill.
  5. Garnish with Doritos… Enjoy with my skinny margarita!!
