- 1 Package gyro meat
- 4 pita’s
- Small onion
- ½ Cup cucumber chopped
- ½ Cup diced tomatoes
- ½ Sliced black olives
- 1 Cup feta or goat cheese
- 1 Cup cheddar cheese
- Tzatziki Sauce
- 1 1/2 cups Greek Yogurt (strained)
- 1 Tbsp lemon juice
- 1 garlic clove, chopped
- 1 med cucumber ~ seeded & diced
- 1 Tbsp Sea salt for cucumbers
- 1 Tbsp finely chopped fresh dill
- ½ Tsp garlic powder
- S&P to taste
Description
This is a Great spin on the Gyro sandwich you can serve as an appetizer or entree.
Tzatziki Sauce
1. Strain yogurt ~
2. Peel cucumbers ~
3. Cut in half lengthwise and scrape out seeds ~
4. Slice & seeded cucumbers then put in colander ~
5. Sprinkle salt ~ let stand for 30 minutes to draw out water ~
6. Drain well and wipe dry with paper towel ~
7. In food processor with steel blade ~
8. Add cucumbers ~ garlic ~ lemon juice ~ garlic powder ~ dill and S&P ~ Process until well blended ~
9. Stir into the yogurt ~ Taste before adding any extra salt ~
10. Chill for at least an hour so flavors can blend ~Yield 2 cups ~ Enjoy Fab Foodies ~
Directions
- Line cookie sheet with tinfoil
- Cut pita’s into triangles and lay in a single layer and spray with Pam and sprinkle with sea salt
- Bake @ 425 until golden brown 10-15 mins
- Med skillet on med/high heat fry gyro meat to med crispness lay on paper towels to absorb excess grease
