- 4 cups chicken stock
- 5 cups broccoli
- 1/4 cup flour
- 1/4 cup butter
- 2 cups sharp cheddar cheese
- 1/4 cup dubliner cheese
- 1/4 cup Pamesan cheese
- 1 cups carrots (shredded)
- 1 onion (diced)
- 2 teaspoons fresh minced garlic
- 1 pint half and half
- 1/4 teaspoon nutmeg
- 1/8 teaspoon cayenne pepper
- 1 teaspoon garlic salt
- Fresh cracked pepper
Description
Broccoli Cheese Soup
This is great for “Meatless Monday’s” ~ Lent ~ Vegetarian
Directions
- In a large soup pot add butter and onion, saute until onions are translucent.
- Stir in flour for 3 mins, gradually pour in chicken broth whisking while adding.
- Add carrots, half and half and seasonings.
- I microwaved my broccoli for 1 minute.
- Add to soup let simmer on med heat for 20 minutes. Turn heat up slightly (be sure not to boil) stir in cheese once blended and serve. :)
