- 1 box Rotini
- 1 pint half and half
- 1/4 cup flour
- 1/4 cup butter
- 1/2 teaspoon garlic salt
- 1/4 teaspoon sea salt
- 1/8 teaspoon garlic powder
- 1 teaspoon chicken base
- 1/8 teaspoon fresh ground pepper
- 1/8 cup white wine
- Pinch of nutmeg
- Pinch of red pepper flakes
- 1/2 cup Fresh grated parmesan
- 2 cups oz Ricotta ( I used cottage cheese)
- 2 eggs
- Another 1/2 cup fresh grated parmesan
- *Topping*
- 1 cup mozzarella cheese
- 1 cup Swiss cheese
- 1 cup panko

Directions
- Preheat oven to 350
- Boil Rotini 2 mins under aldente drain.
- In a small bowl add Ricotta or cottage cheese, eggs and 1/2 cup parmesan and mix together.
- In med sauce pan melt butter then add flour cook until bubbly.
- Slowly pour half and half into pan whisking it until blended, with no lumps.
- Add wine, 1/2 cup parmesan and all the spices cook until thickened.
- Spray 9x13 pan
- Pour sauce over noodles then add ricotta or cottage cheese mixture and mix together.
- Cover with the rest of pasta with mozzarella and Swiss cheese.
- Bake for 30 mins then add panko and bake for 10-15 mins.
- This is truly the BEST mac and cheese!!

I didn’t have mozzarella on hand instead because of what I had I used monterey jack. Hands down the best mac & cheese.
