- 6 Eggs
- 1Tbsp butter
- 1 Cup Fresh sliced mushrooms
- 1/2 Cup sliced onions
- Salt and Pepper
- 1/2 Cup Swiss cheese
- 1/2 Cup Arugula or spinach
- Garnish ~ Sour cream or creme' fresh and fresh fruit

This is a omelet with great level of flavors! Vegetarian ~ The Swiss cheese gives this great depth. Quick and healthy way to start your day! Enjoy Fab Foodies ~
Directions
- Two small pans sprayed
- Med heat
- Small dish beat 3 eggs and to one pan
- Sprinkle with salt & pepper and repeat
- Med pan add 1Tbsp butter
- Add 1 cup fresh mushrooms and ½ c…up sliced onion sauté 10-15 mins
- Add half the mixture to one omelet and the rest to the other
- Sprinkle with Arugula or spinach
- Sprinkle each omelet with ¼ cup Swiss cheese or your favorite
- Cook and flip ~ WaLa breakfast is served ~ Garnish with sour cream or crème fresh and fresh fruit ~ Enjoy Fab Foodies!
Not a fan of salad in my omelet. Left that out and it was good!
I didn’t have Swiss on hand but had Gruyere used that it was wonderful!
