• 1 package Jennie O Italian turkey 1.25 lbs
  • 1 tablespoon olive oil
  • 1 cup celery
  • 1 cup onion
  • 1 cup carrots (shredded)
  • 2 small yellow squash
  • 2 small zucchini
  • 32 oz Clamato juice
  • 2 cups beef base
  • 1 cup chicken base
  • 1/4 cup red wine ( I used petite shiraz)
  • 4 cups tomatoes (I had some in the freezer used them)
  • 1 teaspoon fennel seed (crushed mine was heaping)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic salt
  • 1 tablespoon sugar
  • Pinch red pepper flakes ( my pinch was healthy) optional*
  • 1 tablespoon fresh minced garlic
  • 2 tablespoons fresh Italian parsley
  • 2-3 tablespoons fresh basil
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 1 did about 8 cranks of fresh ground pepper

Skinny Italian Soup

Directions

  1. In large dutch oven add turkey and olive oil and brown, then all the rest of the ingredients *except the fresh parsley and basil*
  2. Let simmer for an hour then add fresh herbs and simmer for 20 minutes.
  3. So rich with flavor it doesn't taste skinny :)
