• 1 ½ lbs fresh vegetables, use the ones you like.
  • 1/4 lb wild rice cheddar sausage
  • I used potatoes, onions, baby carrots, broccoli, cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon rosemary
  • 1 teaspoon sea salt
  • 1/2 teaspoon fresh ground pepper
  • 1/2 teaspoon basil
  • 1/4 teaspoon oregano
  • Pinch of thyme

Roasted Veggies with Wild Rice Cheddar Sausage ~

This is quick week night go to recipe and a great way to get veggies into your diet. You can use whatever vegetables you and your family like. If you don’t have wild rice cheddar sausage you can use… Kielbasa, Brats, Cheddar wurst, Andouille sausage would be awesome in this. Have fun with recipe!

Directions

  1. Preheat oven to 475.
  2. In large plastic bag or bowl, add all veggies and spices.
  3. Coat vegetables with olive oil and spices, coat evenly.
  4. Spray 9X13 pan.
  5. Add veggies.
  6. Bake, stir once, 25-30 minutes or until vegetables are tender.
