• 4 cups chicken stock
  • 5 cups broccoli
  • 1/4 cup flour
  • 1/4 cup butter
  • 2 cups sharp cheddar cheese
  • 1/4 cup dubliner cheese
  • 1/4 cup Pamesan cheese
  • 1 cups carrots (shredded)
  • 1 onion (diced)
  • 2 teaspoons fresh minced garlic
  • 1 pint half and half
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon garlic salt
  • Fresh cracked pepper

Description

Broccoli Cheese Soup

This is great for “Meatless Monday’s” ~ Lent ~ Vegetarian

Directions

  1. In a large soup pot add butter and onion, saute until onions are translucent.
  2. Stir in flour for 3 mins, gradually pour in chicken broth whisking while adding.
  3. Add carrots, half and half and seasonings.
  4. I microwaved my broccoli for 1 minute.
  5. Add to soup let simmer on med heat for 20 minutes. Turn heat up slightly (be sure not to boil) stir in cheese once blended and serve. :)
