• 1 box Rotini
  • 1 pint half and half
  • 1/4 cup flour
  • 1/4 cup butter
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon garlic powder
  • 1 teaspoon chicken base
  • 1/8 teaspoon fresh ground pepper
  • 1/8 cup white wine
  • Pinch of nutmeg
  • Pinch of red pepper flakes
  • 1/2 cup Fresh grated parmesan
  • 2 cups oz Ricotta ( I used cottage cheese)
  • 2 eggs
  • Another 1/2 cup fresh grated parmesan
  • *Topping*
  • 1 cup mozzarella cheese
  • 1 cup Swiss cheese
  • 1 cup panko

Directions

  1. Preheat oven to 350
  2. Boil Rotini 2 mins under aldente drain.
  3. In a small bowl add Ricotta or cottage cheese, eggs and 1/2 cup parmesan and mix together.
  4. In med sauce pan melt butter then add flour cook until bubbly.
  5. Slowly pour half and half into pan whisking it until blended, with no lumps.
  6. Add wine, 1/2 cup parmesan and all the spices cook until thickened.
  7. Spray 9x13 pan
  8. Pour sauce over noodles then add ricotta or cottage cheese mixture and mix together.
  9. Cover with the rest of pasta with mozzarella and Swiss cheese.
  10. Bake for 30 mins then add panko and bake for 10-15 mins.
  11. This is truly the BEST mac and cheese!!
